Day 108- An obscene amount of produce

Well, maybe for some of you out there this is normal, but for us it’s a LOT.

We’ve got kale, celery, carrots, oranges, apples, grapes, squash, cilantro, and green onion. Most of it is for the juicing.

Posing in front of my produce. You know what I love about the gym? Two things: The kids club (that my kids actually like) because it means I can exercise without distractions; and the glorious SHOWER! There is something truly awesome about a nice hot shower after a workout and then you’re just ready for the day. It’s a bit tricky packing a skirt in my bag because it has the potential to get too wrinkled. But I’ve been able to manage it pretty well. I just fold everything carefully the night before. After the gym it was straight to the grocery store.

Day 107- Clinging to Fall

I bought this dress off etsy last year back when I was on my search for a housedress. This is a great comfortable dress. The only problem with it is that it is a lightweight jersey fabric which means that any little thing will stain it. So I have to be careful when I wear it. But it’s cute! And perfect for fall.

I actually wore this the day before Thanksgiving last week but didn’t post it!

Day 106- I’m a sucker for a fad

So I’m on a bit of a health kick. Feeling sick has made me focus more on ways I can improve my health. So I’m going to bed earlier, I’m going to the gym, and ha ha ha I’m juicing.

See I look a bit devilish shoving kale into this thing. Jason and I saw a documentary (I don’t even know what it’s called!) where a guy fasted on juice for 60 days and lost 91 lbs. He was 400+ lbs before. Anyways, so I saw this documentary and thought “Hey! My dad has a juicer! I should try juice!” I think I need more vitamins. ┬áSo I bought a bunch of veggies and went for it.

Ooh la la. Green juice. Kale, spinach, cucumber, celery, apple, and ginger. (It tastes terrible!!!) But I do feel really clean inside after I drink it (if that makes any sense.)

Day 105- Black Friday and my Easy Mac and Cheese

Yesterday was Black Friday and I’m one to go out into the retail wilderness. I tried the 4am thing last year, but didn’t think the deals I got were worth the time spent, so this year I just headed out whenever. I do like getting as much Christmas shopping done as soon as possible without doing a bunch of shopping early like in October. So I’m all for the mad-dash.

I wrote yesterday how we went to Jason’s aunt and uncle’s house for Thanksgiving. I brought fresh bread, cranberry sauce, and mac n cheese. I’m an insecure cook so when people like something I’ve made I get All Kinds of Happy. So today I thought I’d share with you how I make my super easy mac n cheese that everyone liked at Thanksgiving.

Boil the noodles, drain and let dry a bit. Pour them into a large bowl and mix in 16oz of cottage cheese.

Season with salt and pepper now. I season, then stir a bit and season some more.

Mix in three cups of cheese. I use 1/2 sharp cheddar, 1/2 monterey jack. You can always use more cheese if you want. This is something I typically just approximate.

Just a tip to make prep even easier: I buy the big blocks of cheese at Costco and shred them in the food processor all at once and store in this ice cream container. That way I always have shredded cheese on hand since I use it in so many dishes.

Prep a 9 x 13 inch casserole with some oil spray, and pour the mixture in. Drizzle on some half and half over the noodles. I don’t have a measurement here. It maybe ends up being 1/3 cup? More? Less? I just drizzle it on so I really don’t know. When the cheese melts it makes everything creamy.

Add some more cheese on the top and sprinkle on some Parmesan.

Cover and bake at 350 for 20 mins. Then uncover and bake 5-10 mins more just to brown the top a bit.

It tastes light and creamy (IT’S EASY) and my family loves it!

Day 104- Happy Thanksgiving!

It was a long three hour drive to our aunt and uncle’s house, but with views like this you can’t help but enjoy the ride.

It is our tradition to dress “matchy-matchy” for Thanksgiving and as soon as we arrive to our destination, before anyone plays or eats, we take a family photo that will become our Christmas card. Quick, quick, CHEESE! and that’s it. At least I know that once a year, we’ll have a family picture. I’ll save our chosen pic for a more timely post! But here’s what I wore.

Day 103- Mama’s feeling better!

I’m not 100% yet, but on my way I think. Thank you so much for your comments the other day. It really lifted me up knowing that there were people out there praying for me.

I did venture out to the park today which did all of our spirits a world of good. These poor kids have been cooped up for too many days!

Now this is just something silly I wanted to show. After I went to the doctor on Monday, I stopped at Rite Aid. You see that highlighted blue item? That is the ONE item I purchased. This wins the award for the Most Obnoxiously Long Receipt Ever.

Have you ever seen such a thing???? For one single item??

Mama’s been sick

Hi Y’all,

Just wanted to update before I go to bed. I’ve been having recurring migraine headaches for about a week or so. Today was my third one. And after I have one, I feel pretty out of it the next day. I went to the doctor today, so hopefully some high-dose Ibuprofen helps to stop whatever cycle I’m in.

I haven’t forgotten about all of you or my skirty project either! But I’ve been pretty sick, and I need to get better.
